Farewell Summer Potato Salad

Farewell Summer Potato Salad

“Farewell Summer Potato Salad”
Makes: 4 Servings
Prep Time: 45 Minutes
Chill Time: 4 Hours

  • 4 cups red potatoes, medium diced
  • 2 ears corn, shucked and corn trimmed from cob
  • ½ cup celery, small diced
  • ½ cup red onion, small diced
  • 1 lemon, juiced
  • 1 cup mayonnaise 
  • 5-6 basil leaves, chiffonade 
  • 1 tablespoon salt
  • 1 teaspoon black pepper


  1. Boil potatoes in a pot of salted water until fork tender. Drain and allow to cool completely.
  2. In a small bowl, combine lemon, olive oil, salt, pepper, and basil.
  3. To a large mixing bowl, add potatoes, corn, celery, red onion, tomatoes, and dressing. Stir until evenly mixed.
  4. Chill for 3-4 Hours.
