Native to East Asia, shiitake mushrooms are known for their earthy flavor and meaty texture. One of the most popular cultivated mushrooms, they are packed with vitamins and minerals. While you can enjoy them raw, shiitakes are at their best when cooked; they release a rich, umami flavor. Slice and sauté them with a little garlic and butter, use in stir-fries, or mix into pasta.
Tip: It’s best to trim the stems since they tend to be woody. But before you discard them, save the stems to flavor soups and stocks.
