Finocchiona, pronounced fin-OHK-ee-own-ah, is a traditional dry-cured pork salami from Tuscany named after its main flavor component – fennel. A member of the carrot family, the perennial herb is typically associated with a licorice or anise-like taste and it adds a nice zing to the salami. Olympia Provisions Finocchiona Salami is great for snacking and pairs wonderfully with cheese, wine, or by itself.
