Classic Foods seasonal ravioli starts by roasting organically grown Willamette Valley pumpkin. It’s then blended with Asiago, Parmesan, potatoes, roasted garlic, and amaretto cookies, which is then delicately wrapped in egg pasta. The addition of crushed amaretto cookies might sound unusual, but it’s actually a Northern Italian tradition and it gives the filling a sweet nutty flavor.
